I think of my middle school home economics teacher every time I serve that epitome of Pennsylvania Dutch food--pork-n-sauerkraut. I look at the whitish potatoes, brownish sauerkraut, and even browner pork. I was taught we should include a rainbow of colors on our plates. But you know what, I'm not about to mess with centuries of tradition.
Viva la pork-n-sauerkraut! May it continue to bring pleasure to generations of taste buds to come.
